摘要
美藤果蛋白是从美藤果仁或美藤果粕中提取分离得到的新型植物蛋白类食品原料。概述美藤果资源在国内外开发现状、美藤果蛋白的质量指标、加工技术及应用研究进展,比较分析美藤果与其他植物在蛋白质含量和氨基酸组成上的差异性,为美藤果蛋白的研究开发和综合利用提供理论参考。
Sacha Inchi protein is a new plant protein food raw material, which is extracted from Sacha Inchi kernel or meal.The development status of Sacha Inchi resources at home and abroad, the quality index, processing technology and application research progress of Sacha Inchi protein are summarized. The differences of protein content and amino acid composition between Sacha Inchi and other plants are compared and analyzed to provide theoretical reference for the research, development and comprehensive utilization of Sacha Inchi protein.
