摘要
建立同时测定37种脂肪酸的气相色谱-质谱(GC-MS)法,并对吐鲁番产区的40个品种的葡萄籽油中脂肪酸组成及含量进行检测分析。结果表明:葡萄籽油中可检测出19种脂肪酸,40个品种葡萄籽油样中,有14个品种的脂肪酸总含量在90 g/100 g以上。沈农金皇后总脂肪酸含量最高,为99.75 g/100 g。灰比诺、赤霞珠、沈农金皇后、巨玫瑰等品种可作为富含脂肪酸的葡萄籽油提取的优势品种,其中灰比诺中亚油酸含量最高,赤霞珠其次。对不同品种葡萄籽油进行聚类分析,可被明显分为两类,亚油酸和油酸对于品种间的分类具有较大贡献。本法具有操作简单,灵敏度高,定性定量准确等特点,为葡萄籽油中脂肪酸成分的监测和评估提供了技术支持。
In the present study,a gas chromatography-mass spectrometry(GC-MS)method was established for simultaneous determination of 37 kinds of fatty acids,and the composition and content of fatty acids in grape seed oil from 40 varieties in Turpan were detected and analyzedby the standard curve method.The results indicated that 19 fatty acids could be detected in grape seed oil,and 14 of the 40 varieties of grape seed oil samples had a total fatty acid content of 90 g/100 g or above.Shennong Jinhuanghou had the highest total fatty acid content at 99.75 g/100 g.Grape varieties,such as Pinot Gris,Cabernet Sauvignon,Shennong Jinhuanghou and Huge Rose,could be used as fatty acids rich in grape seed oil extraction advantage varieties.Pinot Grisgrape seeds contained the highest linoleic acid content,and the second was Cabernet Sauvignon grape seeds.The clustering analysis of different varieties of grape seed oil could be obviously divided into two categories,and linoleic acid and oleic acid had a great contribution to the classification among varieties.This method had the characteristics of simple operation,high sensitivity,qualitative and quantitative accuracy,and provided technical support for the monitoring and evaluation of fatty acid composition in grape seed oil.
