摘要
采用干灰化法-紫外可见分光光度法对市售不同种类的蘑菇中所含的铁(Fe)、钙(Ca)含量进行检测,分析研究了3种蘑菇(金针菇、平菇、香菇)中微量金属元素含量水平。试验结果表明,金针菇、平菇、香菇中铁的平均含量分别为22.74μg/g、15.56μg/g、5.50μg/g,加标回收率分别为97.42%、97.91%、96.93%;钙的平均含量分别为16.61 mg/g、15.63 mg/g、14.46 mg/g,加标回收率分别为96.31%、96.54%、94.52%。研究表明,3种蘑菇中钙元素含量相差不大,但从铁元素含量来看,鲜香菇小于平菇,金针菇含铁量最高。
To determine the amount of iron,calcium in different kinds of mushrooms(flammulina velutipes,oyster mushrooms,lentinus edodes),this research adopted dry-ashing method-UV visible spectrophotometry and analyzed microelement amount.The average amount of Fe in flammulina velutipes,oyster mushrooms,lentinus edodes were 22.74,15.56,5.50μg/g respectively.The average recovery rates were 97.42%,97.91%,96.93%individually.The results showed that the content of Ca in three kinds of mushrooms was close.However,the content of Fe was different.There was less content of Fe in lentinus edodes than in oyster mushrooms.Flammulina velutipes contained the most amount of Fe.
