摘要
营养素养是一种特殊类型的健康素养,包括食物营养相关知识和理念,以及获得和规划、选择、制作、摄入食物所需要的技能。营养素养是连接个体、食物和环境的桥梁,对于饮食行为和膳食质量具有预测价值,最终影响个体健康与发展、营养健康服务质量和卫生投入,以及食物体系可持续发展。营养素养也是营养教育的主要目标和核心内容。不同人群由于饮食文化环境、生理、认知等存在差异,因此对营养素养的能力要求也不尽相同。基于核心能力要求的人群营养素养评价可筛选营养教育的目标人群和重点内容,为制定健康促进策略提供依据;也可用于健康政策的监测与评估。
Nutrition literacy is a special type of health literacy,including nutritional knowledge and understanding,and skills of accessing,planning,selecting,preparing and eating food.Nutrition literacy connects individual,food and environment together,which could dramatically predict eating behavior and dietary quality,ultimately affect individual health and public nutrition service,as well as sustainable development of food system.Nutrition literacy is also the predominant targets and core contents of nutrition education.The core elements of nutrition literacy in different population are not exactly the same according to their social-cultural environment,demographic characteristics and cognition.Evaluation of nutrition literacy could screen out the population and key elements of nutrition education,and provide a scientific basis for health promotion strategies,which also could be used in health policy monitoring and evaluation.
