摘要
为研究日粮中添加硒代蛋氨酸与酵母硒对济宁青山羊生长性能、肉品质及硒沉积的影响,试验选取健康、体重相近的济宁青山羊100只,随机分为5组,每组20只,对照组饲喂基础日粮,试验组日粮分别添加以硒含量计算的0.3 mg/kg亚硒酸钠、0.3 mg/kg酵母硒、0.3 mg/kg硒代蛋氨酸和0.5 mg/kg硒代蛋氨酸,预饲期15 d,试验期60 d。结果表明:(1)0.3硒代蛋氨酸组平均日增重比对照组、亚硒酸钠组、酵母硒组、0.5硒代蛋氨酸组分别高13.50、9.5、6.16、5.23 g(P<0.05),增重率分别为19.76%、13.13%、8.14%、6.82%;0.3硒代蛋氨酸组料重比最低,比对照组、亚硒酸钠组、酵母硒组和0.5硒代蛋氨酸组分别低2.21、1.40、1.01、1.42(P<0.05)。(2)0.3硒代蛋氨酸组红度(a*)值显著高于对照组、亚硒酸钠组(P<0.05),与酵母硒组和0.5硒代蛋氨酸组相比差异不显著(P>0.05);0.3硒代蛋氨酸组剪切力最小,显著低于对照组、亚硒酸钠组、0.5硒代蛋氨酸组(P<0.05),与酵母硒组相比差异不显著(P>0.05);酵母硒组、0.3硒代蛋氨酸组和0.5硒代蛋氨酸组背最长肌硒含量显著高于对照组和亚硒酸钠组(P<0.05),且酵母硒组、0.3硒代蛋氨酸组与0.5硒代蛋氨酸组组间无显著差异(P>0.05),各试验组肌肉pH、亮度(L*)、黄度(b*)、失水率均无显著差异(P>0.05)。由此可见,在济宁青山羊日粮中添加0.3 mg/kg硒代蛋氨酸,可提高济宁青山羊的生长性能,改善肉的品质,增加肌肉的硒沉积量。
In order to study the effects of selenomethionine and selenium yeast on growth performance,meat quality and selenium deposition of Jining Grey goat,100 Jining Grey goat with similar health and weight were randomly divided into 5 groups,20 in each group.The control group was fed with basic diet;The diets of the experimental group were supplemented with 0.3 mg/kg sodium selenite,0.3 mg/kg selenium yeast,0.3 mg/kg selenomethionine and 0.5 mg/kg selenomethionine calculated by selenium content.The pre-feeding period was 15 days and the experimental period was 60 days.The results showed that:(1)The average daily gain(ADG)of 0.3 selenomethionine group was 13.50,9.5,6.16 g and 5.23 g higher than that of control group,sodium selenite group,selenium yeast group and 0.5 selenomethionine group(P<0.05),and the weight gain rates were 19.76%,13.13%,8.14%and 6.82%respectively;The ratio of feed to gain(F/G)of 0.3selenomethionine group was the lowest,which was 2.21,1.40,1.01 and 1.42 lower than that of control group,sodium selenite group,selenium yeast group and 0.5 selenomethionine group respectively(P<0.05).(2)The redness(a*)value of 0.3 selenomethionine group was significantly higher than that of control group and sodium selenite group(P<0.05),and there was no significant difference compared with selenium yeast group and 0.5selenomethionine group(P>0.05);The shear force of 0.3 selenomethionine group was the lowest,which was significantly lower than that of control group,sodium selenite group and 0.5 selenomethionine group(P<0.05),and there was no significant difference compared with selenium yeast group(P>0.05);The selenium content of longissimus muscle in selenium yeast group,0.3 selenomethionine group and 0.5 selenomethionine group was significantly higher than that in control group and sodium selenite group(P<0.05),and there was no significant difference between selenium yeast group,0.3 selenomethionine group and 0.5 selenomethionine group(P>0.05).There was no significant difference in muscle pH,brightness(L*),yellowness(b*)and water loss rate among the test groups(P>0.05).It could be seen that adding 0.3 mg/kg selenomethionine to the diet improved the growth performance,meat quality and muscle selenium deposition of Jining Grey goat.
