摘要
特殊医学用途婴儿配方食品含有特殊医学状况婴儿所需要的几乎全部营养物质,但这些营养物质有些受温度影响较大,因此,在配制冲调液时对冲调温度要求较为严格。冲调温度过低会导致其冲调效果不佳,冲调温度过高会导致某些对温度较敏感的营养物质损失,从而使特殊医学状况婴儿无法获取充足营养。本文通过用40℃、50℃、60℃、70℃、80℃的冲调温度配制冲调液,对其冲调液进行感官评价,同时根据冲调液中营养物质含量变化情况,综合确认3款特殊医学用途婴儿配方粉最佳冲调温度均为40~50℃。
Food for special medical purpose contains nearly all the nutrients needed by infants with special medical conditions.Some of these nutrients are greatly affected by temperature.Therefore,it is more strict to adjust the temperature when configuring the rinse solution.If the temperature is too low,the effect of formula powder is not well.If the temperature is too high,some temperature-sensitive nutrients will be lost,so that infants with special medical conditions cannot obtain adequate nutrition.This paper used 40℃,50℃,60℃,70℃,80℃to configure the quenching and conditioning liquid,the sensory evaluation of the quenching and conditioning liquid and studied the change of nutrient content in the quenching and conditioning liquid,the results showed that the best quenching and conditioning temperature was 40~50℃.
