纳米抗菌复合薄膜研制及葡萄货架保鲜效果研究 被引量:4

Study on the Preparation of Antibacterial Nanocomposite Films and Its Application in Table Grape Shelf Preservation

摘要 针对‘夏黑’葡萄货架贮藏过程中高失水、霉变、软化等问题,以聚乙烯(Polyethene,PE)为基体,采用共混熔融吹塑工艺,添加纳米TiO_(2)、山梨酸钾(PS)功能助剂,研制具有抗菌功效的纳米活性包装材料(PT、PTPS),并以‘夏黑’葡萄为试材,研究其对葡萄货架保鲜品质的影响。结果表明,与对照组相比,PTPS处理组薄膜的力学性能、透气透湿性能及抑菌性能最佳,且在货架贮藏第10天时,经PTPS包装的果实整体视觉质量保持最好,△E低至7.69,花青素含量为2.205 mg/g,可溶性固形物含量为18.23%,腐烂率为4.22%,失重率为3.21%。说明PTPS纳米抗菌复合薄膜包装能显著抑制果实呼吸作用,有效延缓果实霉变,调控‘夏黑’葡萄货架期品质,利于提高采后‘夏黑’葡萄货架耐贮性能。 The study aims to develop the nanocomposite packaging films (PT and PTPS) with antibacterial function,with polyethylene (PE) as the raw material,nano-TiO_(2) and potassium sorbate (PS) as functional additives,and then apply these films to the shelf preservation of table grape,in order to solve the problems of high water loss,mildew,and softening of ‘summer black’ grape.The results showed that compared with the control group,the PTPS group had the best mechanical properties,permeability and moisture permeability,bacteriostatic properties.At the 10th day of the shelf storage,the overall visual quality of the fruit were maintained well,△E value was as low as 7.69,anthocyanin content was 2.205 mg/g,soluble solid content was 18.23%,the decay rate was 4.22% and weight loss rate was 3.21%.These results indicated that the nanocomposite film could significantly inhibit the respiration of table grape,effectively delay the fruit mildew,regulate the shelf-life quality of table grapes,and improve the storage resistance of post-harvest ‘summer black’ table grape.
