摘要
本研究基于智能消费者测试系统为导向,以浓缩苹果汁和乌龙茶叶为原料制作西打酒,再以西打酒为主要原料添加白桃汁等辅料,制成蜜桃乌龙西打酒。该研究通过正交实验确定了乌龙茶的品种、添加量和浸泡时间;以及西打酒中桃汁、蜜桃香精、赤藓糖醇的添加量。使用智能消费者喜好度测试方法对该产品和4款市售竞品进行测试,该产品的消费者喜好度在测试的5款产品中最高。
Cider is made with concentrated apple juice and oolong tea as raw materials,and white peach juice and other auxiliary materials are added with cider as the main raw material to make peach oolong cider.The study determined the variety,addition amount and steeping time of Oolong tea through orthogonal experiments;and the addition amount of peach juice,peach flavor,and erythritol in cider.The smart consumer preference test method was used to test this product and 4 commercially available competing products,and the consumer preference of this product was the highest among the 5 products tested.
