摘要
花色苷是一种天然色素,具有抗氧化、降血脂、抗衰老等生物活性,在食品、医药行业具有广大的应用前景。该文综述了花色苷提取工艺、分离纯化技术和生物活性的最新研究成果,并总结了花色苷发展需要解决的问题,旨在为花色苷进一步研究提供参考。
Anthocyanins,a kind of natural pigments with biological activities such as antioxidant,hypolipidemic,and anti-aging,and has broad application prospects in the food and pharmaceutical industries.The article summarizes the latest research results of anthocyanin extraction technology,separation and purification technology and biological activity,and summarizes the problems that need to be solved in the development of anthocyanins,and aims to provide a reference for the further research of anthocyanins.
