摘要
随着现代家禽产业转型升级,家禽脂肪沉积分子调控机制及其对肉品质的影响,是现代家禽育种与生产技术领域重要而且复杂的研究方向。肌内脂肪含量作为衡量禽类肉品质特性的重要指标,是一种重要的经济性状。笔者就肌内脂肪含量与家禽肉质性状关系、家禽肌内脂肪沉积相关基因和通路,及其调控的分子机制进行综述,以期为家禽肌内脂肪候选基因及优良肉品质家禽生物育种工作提供重要的参考和借鉴。
With the transformation and upgrading of modern poultry industry,it is an important and complex issue that the molecular regulation mechanism of poultry fat deposition and its effect on meat quality in the field of modern poultry breeding and production technology.As an important index to evaluate the meat quality of poultry,intramuscular fat content is an important economic trait.Therefore,it was reviewed about the relationship between intramuscular fat content and meat traits,genes and pathways related to intramuscular fat deposition,and the molecular regulation mechanism in poultry.They can provide an important reference for the candidate genes of intramuscular fat and the biological breeding of poultry with excellent meat quality.
