摘要
迷迭香(Rosmarinus of ficinalis L.)是一种重要的唇形科香草植物,原产于地中海地区。作为一种重要的香料植物和草药植物,迷迭香具有数千年的栽培和食用历史。迷迭香含有鼠尾草酸、鼠尾草酚、迷迭香酸、迷迭香酚、α-蒎烯、咖啡酸等活性组分。因具有良好的抗氧化和抗菌特性,迷迭香及其提取物广泛用于食品的保鲜。文章综述了迷迭香及其提取物在肉制品、果蔬、水产品等防腐保鲜领域的国内外研究进展,旨在为迷迭香及其提取物在食品保鲜领域中的应用提供理论参考。
Rosemary( Rosmarinus officinalis L.) is an important herb of Labiatae family, which is native to the Mediterranean. As an important aromatic plant and herbal plant, rosemary has thousands of years of cultivation and edible history. Rosemary contains salvianolic acid, salvianol, rosmarinic acid, rosmarinol,α-pinene, caffeic acid and other active components. Rosemary and its extracts are widely used in food preservation due to their excellent antioxidant and antimicrobial properties. In this paper, the research progress of rosemary and its extracts in meat products, fruits and vegetables, aquatic products and other antiseptic and fresh-keeping fields at home and abroad is reviewed, in order to provide theoretical reference for the application of rosemary and its extracts in the field of food preservation.
