摘要
玉米蛋白粉具有气味特殊,口感不好,水溶性差,缺乏必要氨基酸等方面的缺点,其来源主要是玉米淀粉加工过程中的副产物。在传统的玉米淀粉加工过程中,对玉米蛋白粉的主要的处理方式一般是直接当做废弃料液处理或者经过简单加工后用作动物饲料,但在科学技术不断发展的今天,研究玉米蛋白粉的精深加工是一项很有潜力的课题,玉米蛋白粉来源广泛,价格低廉,但经过一定的加工工艺之后就可以生产出优良的玉米醇溶蛋白、天然色素和生物活性肽等具有促进生物生长发育等作用的物质,有利于玉米蛋白的充分吸收和利用,玉米蛋白的综合利用,有利于大大提高玉米蛋白的附加值,使玉米蛋白资源得到合理利用,对玉米的综合价值也有很大的提升。
Corn protein powder is the main byproduct in the process of corn starchprocessing. Its odor is special color, water solubility is not good, the taste is poor, and theessential amino acid is lacking.
