茶树挥发性萜类物质研究进展 被引量:8

摘要 挥发性萜类化合物是茶叶香气的重要来源之一,该类物质具有多种生物学功能,是茶树次生代谢领域的研究重点。花是茶树在自然状态下释放挥发性萜类物质主要器官,芽叶中挥发性萜类化合物主要以糖苷的形式存在。当茶树叶芽经历病虫害、损伤以及加工时,糖苷在糖苷水解酶作用下水解,释放出挥发性的萜类化合物,从而表现出香味、抗病虫等生命特征。本文简述了茶树挥发性萜类化合物生物学功能、生物合成途径及其在芽叶中存在方式等方面的研究进展,并对其发展趋势进行了展望。 Volatile terpenoids are one of the important sources of tea aroma. The compounds have many biological functions and are the focus of research in the field of tea secondary metabolism. In nature, the flowers on a tea plant is the main organ that releases those aromatic substances. In the buds and leaves, volatile terpenoids are mostly found in the form of glycosides. When the fresh leaves encounter pathogen or insect invasions, or physical damages by external impact or processing, glycosides are enzymatically hydrolyzed by glycoside hydrolase. The process discharges terpenoids with manifested characteristics such as aroma-release, disease- or insect-resistance on the plant. This paper presents the current advances on the biological functions, biosynthesis pathway, and existence of volatile terpenoids in buds and leaves in tea plants, as well as the future development in the field of study.
