摘要 目的:从深海海泥中筛选得到产酯酶的微生物,以丰富可酿酒微生物菌群和可酿酒微生物来源.方法:通过18srDNA生物学鉴定微生物种属,并以乙醇和己酸为底物,气相色谱法测定该菌株酯化合成己酸乙酯的能力。结果:从深海泥中筛选到产酯酶酵母菌1株,经18SrDNA生物学鉴定,其与近平滑假丝酵母(Candida parapsilosis)同源性大于99%。讨论:酵母有较佳的酯化能力,酯化合成己酸乙酯的含量经气相色谱检测为67.44mg/100mL,酯化力2.6976U,该海洋产酯酶酵母菌株在酯化反应中有较广泛的底物选择性,尤其对己酸有较高的选择性。 Objective: some strains producing esterase was screened from the sea mud to enrich brewed microorganisms and the source of brewage microbes. Methods: A microbial strain was identified by 18 SrDNA. By using alcohol and hexanoic acid as substrate, The strain's ability of esterificating ethyl caproate was detected by gas chromatography. Results: one yeast producting esterase was screened from sea mud, By 18 SrDNA biological identified the strain, which is more than 99% homologous with Candida parapsilosis in the experiment.Discussion: the yeast strain has better esterification ability. the content of ethyl caproate is 67.44 mg/100 mL. the content of esterifying capacity was 2.6976 U. The marine yeast strain has a broad substrate selectivity in esterification reaction,especially,it has higher selectivity for caproic acid.
