花生壳膳食纤维酶法提取工艺研究 被引量:2

摘要 本试验以花生壳为原料,采用酶法提取花生壳膳食纤维,通过正交试验确定提取的最佳工艺.结果表明,最佳提取条件为:酶加入量0.5%、酶解温度60℃、酶解时间180min、酶水解p H6.0;影响提取率大小的因素依次为:酶解温度>酶添加量>酶解时间>酶解p H;花生壳膳食纤维提取得率为74.82%. Peanut hull was used as raw material in this experiment, the dietary fiber was extracted by enzymatic method of dietary fiber were studied. The conclusion of the study showed that the optimum extraction technology of enzymatic extraction of enzyme dosage 0.5% ,enzyme temperature of 60 DEGC ,enzyme hydrolysis solution time of 180min, enzymolysis pH6.0 ;affect the extraction rate of the size of the factors are as follows: enzymolysis tempera- ture 〉 enzyme dosage 〉 enzymolysis time 〉 enzyme solution pH ;peanut shell dietary fiber extraction rate for 74. 82%.
