摘要
为了开发新型的糖酯类潜香物质,从烟草的致香物质中挑选出对烟草香气贡献较大的酸类物质,并以此作为原料合成了一系列葡萄糖酯类化合物.通过1 H-NMR对得到的潜香物质进行结构鉴定.经过评析,D-吡喃葡萄糖异丁酯(3b)和D-吡喃葡萄糖异戊酯(3c)在烟草中加香协调性好,3b甜润、烟气细柔绵长,3c能醇和烟气香味且使烟气更透发,有进一步产业化的价值.
To develop the new type of glycolipids as flavor precursors, acid substance which has major contribution to the aroma from the flavor matters was selected in tobacco, and this acid substance was used as raw material to synthesize a serial of glycolipids. The structure was confirmed by~ H-NMR. After aroma analysis, the flavoring coordination of D-glucopyranose isobutyl and D-glucopyranose isoamyl ester in tobacco is good. The former is sweet and the flue gas is soft and lingering. The latter can pure the smoke flavor and the flue gas is more transparent. They have the value of further industrialization.
