摘要
在白酒产业趋于机械化、智能化以及节能减排和注重环境保护的行业大背景下,研究了安琪酿酒曲在白酒丢糟发酵领域的应用效果。实验结果表明,糟醅淀粉利用率提高了0.7%,耐酸、耐高温性能显著提高。
Under the background of increasingly mechanized, intelligent, energy-saving and environment-friendly liquor production, the application effects of Angel starter in solid-state fermentation of spent grains were investigated. The results proved that, the applica- tion of Angel starter could enhance the utilization rate of starch by 0.7 % and acid-tolerance and temperature-tolerance got improved significantly.
