摘要
在大豆油中添加一定量的玉米蜡制成具有塑性的凝胶油。研究了玉米蜡含量对凝胶油结构及物理性质的影响。结果表明:玉米蜡含量对凝胶油的硬度、持油性、固体脂肪含量(SFC)、热学性质具有显著影响;随着玉米蜡含量增加,这些性质参数均有增大趋势;不同玉米蜡含量的凝胶油晶体均为细长针状,随玉米蜡含量增加,其针状结晶尺寸减小,空间分布密度增加;但玉米蜡含量对凝胶油体系的晶型影响不大。
Organogels with certain plasticity was prepared by soybean oil and a certain amount of corn wax. The effects of corn wax content on the structure and physical properties of organogels were studied. The results showed that the corn wax content had significant effects on the hardness, oil binding capacity, solid fat content and thermal property of organogels, and these properties showed increasing trend with the increase of corn wax content. The crystals of organogels with different corn wax contents were like slender needle ,with corn wax content increasing, the size of needle crystal decreased and the spatial distribution density increased, while the corn wax content had little effect on crystal form of organogels system.
