摘要
结构化液体油在过去的十几年里一直是国外研究的热点,主要趋向于减少人们饮食中饱和脂肪酸和反式脂肪酸含量。目前国外对有机凝胶油开展了大量研究,但国内对这方面的研究还比较少。该文综述了利用γ–谷维素与β–谷甾醇制备凝胶油的研究进展,并对其形成机理、微观结构、表征技术和应用进行介绍,以期探索凝胶油在食品专用油脂和绿色日用化妆品行业开发利用的可能性。
Structured liquid oils,which mainly tend to reduce saturated fatty acids and trans fatty acids content in our diet,have been the hot topics in the study of foreign countries over the last decade. At present there are a lot of researches on organogels having been carried out in abroad but fewresearcher on this in our country. This paper reviewed the research progress of preparing organogel using γ–oryzanol and β–sitosterol,and introduced the formation mechanism,microstructure,characterization technique and application,in order to explore the possibility of the development and utilization of organogels in food special grease and green daily cosmetics industry.
