摘要
以压榨取油后的脱脂黑豆粕为原料,与不同配比的玉米淀粉混合,利用双螺杆挤压膨化机经挤压膨化工艺制得冲调粉,确定最佳工艺参数,并对不同原料配方及其膨化度、冲调性、黏度、色值等指标进行研究。最终确定配方为:脱脂黑豆豆粕30%,玉米淀粉45%,蔗糖15%,麦芽糊精4%,植脂末6%。
The extruding and expanding experiment was studied with the black soybean meal as material, mixing corn starch by twin-screw extruder to make reconstituted powder, The best expanded technical parameters were determined, and studied the formula, the extrusion ratio, the reconstituability, the viscosity, the color of this powder flour. The optimal formula of the powder was as follows: black soy bean meal 30%, corn starch 45%, sugar 15%, maltodextrin 10%, creamer 6 %.
