摘要
柠檬烯在橙皮油中含量丰富,是一种天然活性单萜,对常见致腐菌有良好的抑制作用。本文介绍柠檬烯的性质及肉类、水果等食品的腐败原理,综述柠檬烯的防腐作用、抑菌机理及其应用的研究进展,展望柠檬烯作为天然防腐剂在食品保鲜中的应用前景。
Limonene, one of the natural and active monoterpene, is rich in citrus essential oils, which has the excellent inhibitory effect on the common spoilage organisms. This paper introduced the properties of limonene, mechanism of food (meat and fruits) corruption, summarized the preservative activity, antimicrobial mechanism and application of limonene, and prospected the application of Limonene as a natural preservative in food preservation.
