摘要
果实采后仍是活的有机体,贮藏过程中不断的软化.综述了引起果实软化的因素及软化机理的研究发展.结果表明,果实采后软化受蒸腾作用、呼吸作用、贮藏环境条件、多种酶的活性和植物激素的调控.
Postharvest fruits are still alive.They will soften gradually during storage.The paper summarizes the research and development(R&D) of mechanisms of fruits softening during storage.The results show that fruits softening is influenced by evaporation,respiration,environment conditions,many enzymes and plant hormones.Moreover,these factors have different effects on different kind of fruits and cultivars.
