摘要
从铜色牛肝菌(Boletus aereus)、双色牛肝菌(B.bicolor)、美味牛肝菌(B.edulis)、灰褐牛肝菌(B.griseus)4种云南野生牛肝菌中提取多酚物质,研究了所得多酚组成及其抗氧化作用。结果表明:铜色牛肝菌、双色牛肝菌、美味牛肝菌和灰褐牛肝菌所含多酚类物质的种类和含量存在差异,在10种酚类物质中,5-磺基水杨酸、儿茶素和肉桂酸在4种牛肝菌中均被检出。其中5-磺基水杨酸含量最高,在4种牛肝菌中的含量分别为986.88 mg/100g、679.00 mg/100g、1 369.25 mg/100g、1 268.5 mg/100g。4种牛肝菌多酚对DPPH自由基、ABTS自由基和羟自由基都具有很好的清除能力,且该清除能力与多酚浓度呈现出很好的剂量相关性。4种牛肝菌都具有很好的铁离子还原能力,IC50值介于0.02和0.04之间。
The polyphenol composition and antioxidant activity of four kinds of Yunnan wild Boletus (B. aereus, B. bicolor Peck, B. edulis and B. gr/seus) were investigated in the present work. The results showed that the type and content of polyphenols were difference in those four Boletus. Among 10 kinds of polyphenols, 5-sulfosalicylic acid, catechin and cinnamon were all detected, and 5-sulfosalicylic acid showed the highest content with 986.88 mg/100g, 679.00 mg/100g, 1 369.25 mg/100g, 1 268.5 mg/100g, respectively. Polyphenol of four Boletus showed better dose-dependent DPPH, ABTS and hydroxyl free radi cal scavenging ability. Ferric reducing ability of wild Boletus lies between 0.02 and 0.04.
