摘要
测定了黄靛牛肝菌子实体的氨基酸、矿质元素以及维生素等主要营养成分含量,并与香菇和双孢蘑菇的营养成分进行了比较。结果表明,黄靛牛肝菌子实体富含蛋白质、多种维生素和矿物质,并含有18种游离氨基酸,其中包括人体必需的8种氨基酸,其铅、镉。
<Abstrcat> The contents of main nutritive components such as amino acids, mineral elements and vitamins in Boletus appendiculatus fruitbody were determined and compared with those in Lentinus edodes and Agaricus bisporus. The results showed that the fruitbody of Boletus appendiculatus contained a considerable amount of protein, ash and eighteen kinds of free amino acids in which eight kinds were essential amino acids. It also contained various mineral elements and vitamins. The contents of heavy metal elements in Boletus appendiculatus fruitbody accorded with the national security standard of food.
