摘要
壳聚糖是世界上唯一的碱性多糖,具有抗癌、保健功能,被称为生命"第六要素",但壳聚糖具有较高的化学稳定性,只能溶于弱酸性水溶液,不能直接溶于水中,这在很大程度上限制了其应用范围,制备水溶性壳聚糖提高其在水中的溶解性非常重要。文章主要对水溶性壳聚糖的制备方法进行了综述,以及对水溶性壳聚糖制备过程中存在的问题和未来的研究方向进行探索。
Chitosan is a basic polysaccharide unique world,has anti-cancer and health care functions,known as the six essential factors of life,but the chitosan has a high chemical stability,it can only be dissolved in an aqueous solution of a weak acid,can not be directly dissolved in water,which largely limits its scope of application,the preparation of water soluble chitosan to improve the solubility in water is very important. The preparation of water-soluble chitosan was mainly summarized. The problems existing in the preparation process of water soluble chitosan and the future of the research direction were explored.
