摘要
植物甾醇属于甾体类化合物,具有多种生理功能。讨论了植物甾醇的化学特性、主要来源、吸收与代谢,并对其降胆固醇作用的研究进展及作用机理进行了综述,最后对其安全性进行了评价,并分析了其应用前景。
Phytosterols belong to the steroids and have many important physiological functions. The chemical characteristics , main sources, absorption and metabolism of phytosterols were reviewed. The cholesterol-lowering effect of phytosterols and its action mechanism were also summarized. Moreover, the safety of phytosterols was evaluated and its application practicability in functional food and feed additives was analyzed.
