摘要
对来自云南南华县不同地方的5份美味牛肝菌样品,采用国内外公认的标准方法,进行氨基酸、矿物质元素、蛋白质、粗脂肪、粗纤维、总糖、水分和灰分等营养成分分析。结果表明:5份美味牛肝菌富含矿物质、蛋白质及氨基酸。在矿物质元素中,常量元素的含量差别较小,而微量元素含量的差别则较大,铁和磷的含量相对较高。7种必需氨基酸占氨基酸总含量的43.04%~44.85%,必需氨基酸与非必需氨基酸的质量比为0.75~0.81。
With five samples ofBoletus edul/s from different places from Nanhua County of Yunnan as raw materials, use standard methods recognized at home and abroad to analyze nutrients including amino acids, mineral elements, protein, crude fat, crude fiber, carbohydrate, moisture and ash. The results show that, five samples of Boletus edulis are rich in minerals, protein and amino acid. In mineral elements, the difference of contents of major elements is small, but the differences are greater in contents of trace elements, the contents of Fe and P are relatively higher, Seven kinds of essential amino acids accounted for 43.04%-44.85% of the total amino acid quality, and mass ratio of essential amino acid and non-essential amino acid is 0.75-0.81.
