摘要
采用固相微萃取-气相色谱-质谱法(SPME-GC-MS)对沙虫(Sipunculs nudus)及沙虫美拉德反应物的挥发性成分进行测定。结果表明,从沙虫和沙虫美拉德反应物中分别鉴定出34种和46种挥发性化合物,主要包括醇、醛、酮、烃、杂环类化合物等,通过比较,沙虫美拉德反应物比沙虫香气成分的种类增多,如(-)-4-萜品醇、α-松油醇、香叶基丙酮、(+)-柠檬烯、萜品烯等,苯甲醇和苯甲醛含量明显增加。
The volatile compounds in Sipunculs nudus and its Maillard reaction products were detected by solid-phase microextraction-gas chromatography-mass spectrometer(SPME-GC-MS) techniques. The results showed that there were 34 and 46 kinds of volatile compounds, respectively, most of which were alcohol, aldehydes, hydrocarbon and heterocyclic compounds et al. By comparison, the Maillard reaction products had more kinds of aroma components such as(-)-4-terpineol, α-terpineol, geranylacetone,(+)-Limonene, terpinene. The contents of Benzyl alcohol and benzaldehyde dramatically increased in the Maillard reaction products.
