摘要
探索黄酒陶坛贮酒陈酿的机理,开发专用的大型贮酒设备,采用碘量法和可见分光光度计法对传统黄酒陶坛的透氧能力做了初步的研究。结果表明,在20 d中,黄酒坛的总溶氧量为7.06 mg/L,日平均溶氧量为0.35 mg/L,从而为微氧化技术在黄酒生产中的应用提供了重要参考依据。
In order to explore the aging mechanism of yellow rice wine in pottery wine jar, large storage apparatus for Shaoxing yellow rice had been developed, and a preliminary study of the oxygen permeability of traditional Shaoxing pottery wine jar was carried out by iodometric method and spectrophotometer method. The results showed that within 20 d after wine stored in jar, the total amount of dissolved oxygen in jar was 7.06 mg/L, and daily average dissolved oxygen capacity was 0.35 mg/L. Thus this study provided important reference for the application of micro-oxygenation technology in Shaoxing yellow wine production.
