摘要
蟹性腺中含有丰富的脂质。介绍了脂质在蟹性腺中的构成,并比较了不同时期、不同蟹种性腺中的脂质。综述了蟹性腺呈香过程中由脂质产生的香气分子,并分析了脂质产生这些香气分子的机理,以期探究蟹性腺中脂质对其香气的作用,为今后探讨蟹中香气成分提供理论依据。
Crab gonad contains abundant lipid. This paper introduced the lipid composition of crab gonad and compared the lipid in different periods or in different species. Then, the paper also elaborated some aroma compositions generated by lipid in the crab gonad and reviewed the mechanism in the aforementioned reactions, to explore the effect of lipid in the crab gonad on the aroma and provide theory basis for further study of aroma positions in crab.
