摘要
以养殖大黄鱼鱼片为原料,对碱法和酶法脱脂的效果进行了比较,并对最佳工艺进行优化,确定了最优的脱脂条件.结果表明:NaHCO3的脱脂效果较优,其最佳脱脂条件为:w(NaHCO3)为2.5%、脱脂时间60 min、料液比1∶1,该条件下脱脂率为53.11%,蛋白质损失率为10.07%.使用质构仪TPA模式对脱脂处理前后的大黄鱼鱼片进行质构分析,结果显示,大黄鱼鱼片的硬度、凝聚性和咀嚼性有所下降,弹性变化不大,黏附性增大.
We compared the decreasing effects of cultured Pseudosciaena crocea fillets of alkali method and enzymatic method,optimized the process, and determined the optimum degreasing conditions. The results showed that NaHCO3 had the best degreasing effect; and the degreasing rate reached 53.11% and the protein loss rate was 10.07% under the optimum degreasing conditions of w(NaHCO3) 2.5%,decreasing time 60 minutes, and material-to-liquid ratio 1 ∶1. The texture properties of cultured Pseudosciaena crocea fillets before and after degreasing treatment was analyzed by a texture analyzer in TPA mode; and the results showed that the hardness, cohesiveness and chewiness of Pseudosciaena crocea fillets declined slowly,the springiness had little change,and the adhesiveness increased after treatment.
