摘要
本文研究了提取溶剂及pH对云南滇红红茶色素的吸收光谱的影响。用不同的溶剂从滇红茶中提取茶色素,对茶色素提取液进行紫外-可见吸收光谱测定及分析。结果表明,云南滇红茶中的茶色素主要由茶红素和茶黄素两种水溶性色素构成。提取溶剂的极性强弱对茶红素和茶黄素的溶出有很大影响,以水做溶剂提取的主要是茶红素和茶黄素。茶红素和茶黄素结构受酸碱影响较小。以水做溶剂提取茶色素,pH值对提取率的影响并不显著。
This paper studies the effect of extraction solvent and pH absorption spectra of pigment from Yunnan Dianhong black tea. The extraction of pigment from Yunnan black tea with different solvents were measured and analyzed. The results show that, the tea pigment is mainly composed of thearubigins and theaflavins. The polarity of extraction solvent has great influence on extract of thearubigins and theaflavins, and the two pigments are mainly dissolved with water. Thearubigin and theaflavins are stable in pH conditions, and pH value has few significant influences on extraction rate with taking water as extraction solvent.
