摘要
分析了黄河滩枣中的营养成分及含量。依据国家标准方法测定了黄河滩枣中的水分、蛋白、还原糖、总糖、矿物质及氨基酸等的含量。试验结果表明:黄河滩枣中含有水分26.3%,还原糖23.4%,总糖35.2%,蛋白质6.009g/100g;含有苏氨酸、丙氨酸、甘氨酸、组氨酸、精氨酸等18种氨基酸,其中包括8种人体必需氨基酸;含有钾、钙、钠、镁等人体所需的常量矿物元素,同时还含有锰、铜、锌、铁等人体必需的微量元素,钾的含量最高,钙含量次之,是典型的高钾低纳食品。黄河滩枣品质的成分分析结果表明,黄河滩枣营养成分丰富,品质优良,这为其加工特性分析和进一步的研究利用提供了良好的基础。
This article analyzed the nutrition composition and content of the Yellow River beach date. On the basis of the national standards, we detected moisture, protein, reducing sugar, total sugar, minerals and amino acid content of the Yellow River beach date. The results showed that the Yellow River beach date contains moisture content 26.3%, reducing sugar 23.4%, total sugar 35.2% and protein content is 6.009 g/100 g. Contains 18 kinds of amino acids and including threonine, alanine, glycine, I-histidine, arginine, etc, also including 8 kind essential amino acids of human body. Contain potassium, calcium and, magnesium, manganese, copper, zinc, iron and other essential trace elements, the highest content of mineral is potassium, calcium content is the second, and the date is a typical food that high potassium and low sodium. The Yellow River beach date quality analysis showed that the date riches in nutrition ingredient and good quality, it provided a good foundation for the processing characteristics analysis and the further research.
