葡萄籽中多酚物质的超声提取及其抗氧化活性研究 被引量:8

摘要 [目的]研究葡萄籽多酚的超声波提取条件和抗氧化活性。[方法]以超声提取获得葡萄籽多酚,采用Fenton反应.OH体系研究抗氧化活性。[结果]最佳提取工艺条件为:超声提取60 min,浓度75%乙醇,料液比为1∶20。在最佳条件下,多酚得率为10.71%。葡萄籽多酚提取物对Fenton反应羟自由基清除的IC50为0.031 g/L,0.093 g/L时清除率达最大,最大清除率为87.12%。[结论]葡萄籽多酚超声提取具有良好的抗氧化活性。 [Objective] The research aimed to study the ultrasonic extraction and antioxidant activity of polyphenols extracted from grape seeds.[Method] Polyphenols of grape seeds was extracted by ultrasonic extraction and antioxidant activity was determined by scavenging effect on Fenton reaction ·OH radical with spectrophotometry.[Results] The optimum condition for the extraction of polyphenols were as follows: 60 min of ultrasonic time,75% of alcohol and 1∶ 20 of solid-liquid ratio.An extraction rate for the polyphenols from grape seeds was 10.71% under the optimum condition.The maxium scavening rate of 0.093 g/L extraction on ·OH was 87.12 % and IC50 reached 0.031 g/L.[Conclusion] The polyphenols from grape seeds obtained by ultrasonic extraction have good antioxidant activity.
