摘要
目的:研究人参粗蛋白含量随海拔的变化规律。方法:采集我国人参主产地长白山区不同年限、不同海拔人参,采用凯氏定氮法测定人参根中粗蛋白的含量。结果:同一海拔同一地区4年生人参粗蛋白含量高于5年生。海拔127-305m人参粗蛋白含量随海拔升高而降低;海拔400~600m粗蛋白含量随海拔升高而增加;海拔700—1410m粗蛋白含量随海拔的升高而降低。其中珲春地区4年生人参,海拔高度在127m的粗蛋白含量最高为13.41%;长白地区5年生人参,海拔高度在1410m的含量最低为7.92%。
Objective: To study the rule of ginseng protein content compared with the variation of altitude. Methods: The different year-old roots of Panax gingseng were Collected from different altitude areas in Chang- bai Mountain, and the content was determined by kjeldahl determination. Results: The ginseng protein content of 4 years old is higher than 5 year-old ginseng protein under the same altitude in the same area. Ginseng protein is de- creased with the altitude went up from 127 m to 305 m; increased with the altitude from 400 m to 600 m; decreased with the altitude from 700 m to 1 410 m. Protein content of 4 year-old ginseng at 127 m in Hunchun, 13.41%, is the highest and 5 year-old ginseng in Changbai Mountain area at 1410 m. 7.92 % , is the lowest.
