摘要
稻米的食味品质是稻米品质的重要组成部分。稻米食味品质检测评价技术的研究,可指导流通过程中稻米品质优劣的评定,且对优质稻米的育种和推广起到重要的作用。笔者归纳了稻米食味品质检测评价技术的研究现状,详细介绍了现已发展较为成熟的感官评价技术、理化指标检测评价技术以及近红外装置评价技术,总结了现有检测技术中存在的一些问题,并重点讨论了基于稻米或米饭香气的电子鼻检测新技术的发展趋势,最后结合中国的实际,对稻米检测评价技术的研究方向进行了展望。
Rice eating quality was one of the most important components on rice quality (Oryza sativa L.). The studies on detecting technology of eating quality evaluation in rice had been guiding the evaluation of rice quality during circulation, playing an important role in rice breeding for eating quality and extension of that. In this paper, the author reviewed the research status of this technology and extensively introduced these developed techniques including the sensory evaluation technique, the index-evaluation technique and near-infrared instrumental measurement. Furthermore, some major problems were addressed on evaluation of rice eating quality. The development trends on aroma characteristics detected by electronic nose were discussed. In view of the practical situation in China, the research direction of detection technology for eating quality evaluation was prospected.
