摘要
在大田条件下,研究了氮肥和化学调控对小麦品质的影响。结果表明,氮肥和化控处理对籽粒蛋白组分和加工品质有一定的调节作用。研究表明,与180kg/hm2的施氮量相比,施氮270kg/hm2显著提高了清蛋白、干湿面筋含量以及面粉吸水率,但增氮肥不利于球蛋白和醇溶蛋白含量的提高;与对照相比,起身期喷施麦巨金对蛋白组分和加工品质有明显的正调节效应,其中对清蛋白、干湿面筋含量和吸水率的影响达显著水平;喷施乙膦水剂有利于粉质参数的改善;喷施多聚氨基酸钾盐对沉降值和吸水率有一定的正调节效应。
The effects of plant growth regulator on wheat had widely reported,but most of the studies focused on the yield and its component.There were less studies on wheat quality,so we designed this experiment.In the field conditions we designed two factors studied nitrogen and chemical.The results showed that chemical control and nitrogen treatment was propitious to adjust the protein components and the processing quality.The study showed that compared with 180 kg/ha,270 kg/ha significantly increased albumin,dry and wet gluten content and flour water absorption,but it was unconductive to the improvement of the globulin and gliadin content,with more nitrogen applied;Compared with the contrast,there were positive effects toward to the protein components and processing quality spraying wheat growth regulator Maijujin at setting stage,in which the effects on albumin,wet and dry gluten content and water absorption were significant.Spraying ethephon water agent could improve rheology.There were some positive effects on the sedimentation value and water absorption of spraying poly-AA sylvite at setting stage.
