摘要
在上海烟草(集团)公司(上烟集团)浓香型烟叶原料基地河南襄城县制备外观质量不同的烤烟样品群,研究了外观质量对感官评吸质量的影响,并采用典型相关分析研究了两种重要香气前体物质体色素和多酚对感官评吸质量指标(香气质、香气量、杂气和余味)的影响。结果表明:①不同色域,上部叶以浅橘黄~橘黄的感官评吸质量较好,中部叶以橘黄较好;在达到国标"成熟"的基础上,上部叶以成熟下限、中部叶以成熟中限较符合上海烟草集团的原料需求;上部叶随油分含量的提高香气品质呈变好趋势,而中部叶在油分含量较低时的香气品质较好;②典型相关分析结果显示,质体色素和多酚与浓香型特色烟叶的感官评吸质量,尤其是香气品质关系密切。叶黄素和叶绿素与香气量有较强的负相关性,β-胡萝卜素和类胡萝卜素与香气质的正相关性则较强;多酚类物质中的绿原酸和芸香苷与香气质的正相关性较强,而新绿原酸和咖啡奎尼酸等则与香气量的变化趋势相反。
Taking the flue-cured tobacco of different appearance quality from the production base of full flavor style tobacco leaf of Shanghai Tobacco(Group) Corporation in Xiangcheng,Henan Province as samples,the influence of leaf appearance on smoking quality was investigated,and the effects of two important aroma precursors,plastid pigment and polyphenol,on smoking quality indexes(including aroma quality,aroma quantity,offensive odor and aftertaste) were studied with canonical correlation analysis.The results showed that: 1) Light orange and orange upper leaves and orange middle leaves presented better smoking quality;in the range of "ripe" specified by national standard,the upper leaves near lower limit of ripe and middle leaves of average ripe better fitted the requirements of Shanghai Group.The aroma quality of upper leaves improved with the increase of leaf oil,while that of middle leaves with less oil was better.2) The canonical correlation analysis indicated that plastid pigment and polyphenol were closely related with the smoking quality,especially aroma quality,of full flavor style tobacco.Lutein,chlorophyll,neochlorogenic acid and coffee quinic acid were negatively correlated with aroma quantity,while β-carotene,carotenoid,chlorogenic acid and rutin were obviously positively correlated with aroma quality.
