虫草醇提物的抗氧化活性及保健酒的研制 被引量:2

摘要 冬虫夏草和蛹虫草是一类对人体具有营养和保健功能的真菌。本文对比了冬虫夏草深层发酵菌丝体粉和蛹虫草子实体醇提物的还原力和清除自由基能力,研制了一种虫草保健酒。结果表明:冬虫夏草深层发酵菌丝体粉的抗氧化活性略强,作为保健酒的原料,成本也较低。 Fungi Cordyceps is nutritious and medical functions to human.The DPPH free radical scavenging rate, reducing power and the hydroxy free radical scavenging rate of ethanol extracts from mycelium in submerged fermentation liquid of Cordyceps sinensis (Berk.) Sacc.and the fruit body of Cordyceps militaris (L.) Link were analyzed.The antioxidant activity of ethanol extracts from mycelium in submerged fermentation liquid of Cordyceps sinensis (Berk.) Sacc.was higher than that of the fruit body of Cordyceps militaris (L.) Link.The manufacture cost of health alcohol using submerged fermentation myoelium was relatively lower.
