六堡茶快速陈化新工艺对茶叶品质的影响 被引量:13

摘要 [目的]为提高六堡茶的陈化品质提供理论依据。[方法]对六堡茶半成品散茶进行充氧辐照快速陈化处理,并测定处理样及对照样(不充氧气而充空气)茶叶中水浸出物、水分、粗纤维和茶多酚的含量。[结果]充氧量为100%、辐照剂量为12kGy时茶叶的水浸出物含量最高(比对照样高7.25%),粗纤维含量最低(比对照样低37.06%),水分含量(6.52%)和茶多酚含量(9.25%)较理想;适当充氧辐照可提高六堡茶的水浸出物含量,降低其水分、茶多酚和粗纤维含量,有效改善其品质,使茶叶达到成品《DB45/T581-2009六堡茶》广西地方标准。[结论]充氧量为100%、辐照剂量为12kGy的处理可显著改善六堡茶的陈化品质。 [Objective] The study was to provide the theoretical basis for improving the aging quality of Liubao tea.[Method] The Liubao tea was treated by rapid aging process with oxygen and radiation,and the contents of water extract,moisture,crude fiber and tea polyphenol in contrast (treatment with air) and the treated samples were determined.[Results] When oxygenation capacity was 100% and irradiation dose was 12 kGy,the water extract content from the tea was the highest (being 7.25% higher than that of CK) with the lowest crude fiber content (being 37.06% lower than that of CK) and the ideal contents of moisture (6.52%) and tea polyphenol (9.25%).Proper treatment with oxygen and radiation could increase the water extract content from the tea and decrease the contents of moisture,tea polyphenol and crude fiber,and effectively improve the quality of the tea,made it require Guangxi local standards of made tea "DB45/T581-2009 Liubao tea".[Conclusion] The treatment with oxygenation capacity of 100% and irradiation dose of 12 kGy could significantly improve the aging quality of Liubao tea.
