摘要
山桃稠李的花色苷是一类从山桃稠李果实中提取的天然活性成分,其水解后得到花色素和糖类,对花色素的研究有助于了解花色苷的结构和性质。本实验采用HCl水解山桃稠李花色苷制备花色素,通过高效液相色谱测定花色素含量来监测花色苷的水解程度,确定了山桃稠李花色苷的最佳水解条件:水解时间为1h、HCl浓度为3mol·L-1、固液比为1∶9。应用高效液相色谱法分析花色素类物质具有简便、快捷、准确、可靠等优点。
Prunus maackii anthocyanins were extracted from the fruits of Prunus maackii. The hydrolysate of anthocyanins were proanthocyanidins and carbohydrates, studying proanthocyanidins was beneficial to analyse the strueture and the properties of anthocyanins. There were many kinds of functional activities of the anthoeyanin, so it was very significant to study on hydrolysis condition of Prunus maackii anthocyanins. The objectives of this study were to get the optimum hydrolysis conditions of Prunus maackii anthocyanins. In order to determine the hydrol3,sis degree of Anthocyanins, the method was simple, convenient, accurate and reliable by HPLC to measure the area of the chromatographic peak of proanthoyanidins, According to the qualitative and quantitive study of cyanidine, orthogonal analysis was used to get the optimum hydrolysis conditions which were that hydrolysis time was lh, concentration of HC1-CH30H solution was 3mol·L^-1, and ratio of material to liquid was 1:9.
