微生物源β-呋喃果糖苷酶及其在功能性低聚糖工业中的应用

摘要 微生物β-呋喃果糖苷酶在功能性低聚糖的工业中有广泛的应用前景,不同微生物来源的β-呋喃果糖苷酶特性和作用方式均不同,因而在不同的功能性低聚糖生产中有不同的应用特点。本文综述了微生物β-呋喃果糖苷酶的产生、特性及其在功能性低聚糖生产中的应用。 β- Fructofuranosidase from microorganisms has attracted a great deal of attention in recent years because of their biotechnological potential application in functional oligosaccharide industry. Properties of β-fructofuranosidase are different due to various microorganisms. This paper reviews the highlights of complex microbial β-fructofuranosidase including their production, properties and their application in functional oligosaccharide industry.
