细胞壁分解酶与果实软化的关系研究进展 被引量:22

摘要 软化是影响果实采后寿命的重要因素。为了延长水果的货架期,各国植物生理学家对果实软化机理进行了长期不懈的探讨,作者综述了近几年最新研究进展。过去一直认为水果软化主要是果胶酯酶作用的结果。最近几年通过反义技术观察细胞壁酶与果实软化的关系,结果表明果实软化不是任何一个酶单独作用的结果,而是成熟过程一系列细胞壁酶有序作用的结果,这些细胞壁酶的作用通常还依赖于其他酶的活性。但各种酶在不同种类果实成熟与软化过程的表现各有特点,有的甚至完全相反。因此控制果实软化需要针对不同种类的果实控制不同的酶活性。这些结果对从事水果保鲜的研究人员具有一定的参考价值。 Softening is significant factor affecting postharvest life of fruit, and is the result of sequence of a series of enzymes for cell wall metabolism. Different enzymes showed various characteristics during ing or softening of different fruits. Focusing on various enzymes for cell wall metabolism, with regard action ripen-to enzymes activity and their genes expression during ripening or softening of different fruits, the latest research advancement was reviewed, and mechanism of fruit softening was speculated in this paper.
