摘要
玉米作为我国重要的粮食和经济作物,在深加工产业中发挥着重要作用。介绍了玉米淀粉和蛋白粉的深加工产品(包括变性淀粉、淀粉糖、淀粉发酵物玉黄色素、醇溶蛋白、活性肽)及副产品的综合利用现状,同时指出了玉米深加工业存在的主要问题和发展趋向。
The corn as Chinese major grain and economical crop, has been played an important role in deep processing industry. The comprehensive utihzation of deep processing products of maize starch and albumen powder were introduced in this paper, including modified starches, starch sugar, starch derivatives from ferment, maize yellow pigment, zein, and biological active peptide. Besides, the main problems and developing trend were pointed out.
