摘要
采用西瓜翠衣为原料,研制富含水溶性膳食纤维的功能性饮料。采用果胶酶、纤维素酶双酶法水解西瓜翠衣,适宜的条件为果胶酶237U/100mL底物,纤维素酶63U/100mL底物,酶解pH为5.0,温度为50℃,反应时间2h。最终产品性质稳定,保留西瓜特有的风味,为西瓜的综合利用提供新途径。
Watermelon's peel was used as raw material to develop a functional beverage rich in water soluble dietary fiber. Study found that in combined enzymolysis of watermelon peel by cellulase and pectolase, the optimum reaction condition was pectolase 237 U/100 mL, cellulase 63 U/100 mL substrate, pH5.0, 50 ℃, and 2 hours, respectively. The final product was stable and had specific flavor of watermelon. This research would provide a new way of watermelon's complex utilization.
