摘要
选用500μm和80μm两种平均粒度不同的蔗渣膳食纤维,在法国ClextralBC-45型双螺杆挤压机上探讨挤压蒸煮处理对蔗渣纤维组成与含量的影响。结果表明,经挤压蒸煮后,蔗渣纤维的水溶性得以明显提高(2.2-12.4%),可溶性纤维含量也得以显著增加(2.7-9.5%),但对总膳食纤维含量的影响很小。
Two batches of bagasse fibre of different average size (500μm and 80μm)were extruded with Clextral BC-45 twin screw extruder made in France, in order to investigate the effects of extrusion-cooking on dietary fibre composition and content. The water solubility of extruded products increased obviously (2.2-12.4%), and the soluble fibre content also increased markedly (2.7-9.5%), but little effects were found on the total content of dietary fibre.
