摘要
食品安全风险评估是实施食品安全监管的重要措施,是当前实现食品安全最有效的手段之一,加强食品安全风险评估可以保证食品质量,确保人类健康。通过对食品安全风险评估的定义、风险评估的基本模式及风险评估过程的阐述,介绍了食品安全风险评估的原理和方法。根据目前农产品中农药污染问题的严重性,对农产品中农药残留进行了风险评估,简要阐明了食品安全风险评估的应用。
The food safety risky assessment is the important measure for food safety supervision and is one of the most effective means for realizing food safety. The paper introduces the principle and methods of food safety risky assessment, expounds the fundamental model and procedure of food safety risky assessment by defining food safety risky assessment to ensure food quality and keep human being healthy, and explains the application of food safety risky assessment by carrying out the risky assessment of pesticide residues in agricultural products in the light of the severe problem of pesticide residues in agricultural products.
