摘要
通过单因素和正交实验得到了最佳工艺条件,即酶品种为混合酶(蛋白酶加纤维素酶比例为1︰1),粉碎度40目,料水比1︰3,加酶量2.1%,酶解时间4.5 h,酶解温度50℃,pH值6.0,玉米渣膳食纤维得率为82.6%。同时研究了玉米渣膳食纤维的功能特性,其持水力为367%,膨胀性为315%,持油性为137%。在此条件下得到的玉米渣膳食纤维,色泽为淡黄色的粉末状,粒度均匀,无特殊气味,是理想的膳食纤维。
This experiment studied the technological conditions of enzymic extraction of dietary fiber of corn dregs. By single-factor experiment and orthogonal experiment the optimal technological conditions is founded as follows: mixed enzyme (proteinase + cellulase 1 : 1), comminution degree 40 mesh, material-water ratio 1 : 3, enzyme dosage 1.8%, enzymolysis time 4 h, enzymolysis temperature 50 ℃, pH 6.0, and the yield of dietary fiber of corn dregs is 82.6%. In the meantime, the functional properties of dietary fiber of corn dregs is studied, its water-keeping power is 367%, its swelling power is 315% and its oil-keeping power is 137%. The dietary fiber of corn dregs under these conditions is powder with yellowish color, uniform particle size and no special odor, and it is a ideal source of dietary fiber.
