摘要
苹果多酚作为一种新型的天然抗氧化剂,是苹果中一类重要的活性物质,在未成熟的苹果和果渣中含量丰富。介绍了苹果多酚的组成及性质、生化及生理功能、制备方法及分析,在医药、功能性食品、化妆品等领域的应用前景,并对苹果多酚的研究现状作了概述。
As a new type of nature antioxdants, apple polyphenol is an important activity substance contained in apple. It is very rich in unripe apple and apple pemace. In this paper, the composition and property, the biochemical and biological function, the preparation method, analysis of apple polyphenol were summarized. The application of apple polyphenol in medicine, function food and cosmetic were discussed.
