摘要
本文针对海带膳食纤维的组织形态与生理功能可能存在的联系进行探讨。本研究采用扫描电镜与石蜡切片的光学显微镜观察经不同处理方法的海带膳食纤维的组织形态,探讨了不同细度的海带膳食纤维同市售的膳食纤维商品在松装密度、堆积密度、持水力、膨胀力等物理性质的差别,结果发现海带膳食纤维的在功能性指标方面有着较好的品质,其组织形态与膨胀力、持水力与膨胀率等生理功能有着一定的联系。
The relation between the configuration and physiological functions of dietary fiber from kelp(DFK)was discussed. By the scanning electric microscope and optics microscope, the configurations were observed ,and the differences between the commodity and DFK including loose density, the power of expanding, the power of holding water and so on,were compared. The DFK would influent its physiological function with its configurations.
